Butter

Unsalted butter is the best thing for this mincemeat shortbread recipe. Mixing the butter with the flour is what brings the dough together. Don’t forget to get your butter out of the fridge nice and early so its soft.

Caster sugar is what you need for this recipe, it’s finer than granulated so won’t leave your bakes with a gritty texture. If you are out of caster sugar, granulated will work fine for mincemeat slices.

How long can you keep mincemeat in a jar without? ›

The containers you use must be scrupulously clean, so I like to use jars straight out of the dishwasher or I sterilise them in the oven. If you store it in a cool dark place the mincemeat will last for up to 1 year unopened. Once open store in the refrigerator and use within 3=4 months.

What happens if you put too much butter in shortbread? ›

Greasy mess: Extra butter means more fat, making the dough greasy and difficult to handle. Spreading like crazy: Cookies lose their shape, spreading thin and flat instead of staying nice and round. Uneven baking: The excess fat can burn easily on the edges while leaving the center undercooked.

Instead, chill the dough in the refrigerator for 30 minutes or so (overnight is OK, too). A short stay in the fridge will firm up the cookies and solidify the butter. This will help keep them from spreading too much.

Should you chill shortbread dough before rolling? ›

Roll out the shortbread dough.

On a lightly floured surface, roll it out to a ½ cm (¼ inch) thick. Note: if the dough is too soft at this point then wrap it in plastic wrap and refrigerate for 10-15 minutes or longer until it firms up slightly and makes it easier to roll out.

Store-bought mincemeat can contain alcohol, and if it doesn't, here's my tip: add some. It will kick your mince pies up to the next level. Rum or brandy go especially well with the other ingredients.

Fresh minced meat can go through a number of colour changes during its shelf life. This occurs naturally, and a brown colour just under the surface does not mean that the meat is old, stale or unsafe to eat.

Can I use last years mincemeat? ›

It's probably ok, but might not taste quite right. I have a friend who buys up reduced price mincemeat, marzipan, ready made icing etc after Christmas, and uses these provisions to make the next year's mince pies and lots of small Christmas cakes to give as gifts.

Can you use year old mincemeat? ›

Yes. I'd use that. Mincemeat has a very long shelf life, far longer than that printed on the container, (which is only a short while ago). I'd add a slug of brandy or whiskey to perk it up a bit!

Why did my shortbread fail? ›

There are a variety of reasons why the shortbread could be damp underneath but it is most likely that either the dough is being pressed out too thickly, the pan is not metal so heats up too slowly, or the oven temperature is too high causing the top to brown before the bottom has cooked sufficiently.

Should the butter be cold when making shortbread? ›

If it's too warm, the butter and sugar cannot properly cream and the cookies will taste dense. Many shortbread recipes call for cold butter worked into the dry ingredients and that gives you a wonderfully flaky cookie but if not mixed properly, the results can be inconsistent.
